Allergen-Friendly Energy Bites
Energy bites are the perfect snack for when you are on the go. These energy bites are allergen friendly (no nuts or peanuts) and a perfect snack for kids whether at school or on the slopes. Keep one in your kids’ pocket for a quick energy pick me up. They are loaded with protein, fiber, omega-3s, zinc, Vitamin E and more.
Makes 8 - 10
1 c rolled oats (not quick cooking)
1/2 c dried apricots, chopped finely
1/4 c mini chocolate chips
1/8 c ground flax seed
1 tbsp chia seeds
1/2 c sunflower seed butter
1/3 c honey
1 tsp vanilla
Line half sheet pan with parchment paper or silicone mat. In medium bowl, mix oats, apricots, chocolate chips, flax seed and chia seeds. Add sunflower butter, honey and vanilla. Stir together. Refrigerate 30 minutes. Roll into golf sized balls and place on baking sheet. Freeze 1 hour.
