Small changes lead to Big wins

If your kids like pasta with parmesan cheese, then you need to try this dish. Orzo is pasta, but more like the shape of rice. So, while this dish doesn’t taste that different than pasta with parmesan cheese, it LOOKS different. And, for kids, accepting different looking food is a huge part of the battle. Teaching kids that they like something new makes them more likely to try another new food. So, try out this easy and delicious family fave below.

(egg free, peanut-free, tree-nut free, sesame free)

Makes ~4 servings

2 tbsp unsalted butter

1 cup uncooked orzo

1 (14.5 oz) can chicken broth 

1/2 c grated parmesan cheese

1/4 c fresh basil, chopped

kosher salt + pepper

Melt butter in heavy skillet over medium high heat. Stir in orzo and sauté until lightly browned. Stir in chicken broth and bring to boil. Cover, reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes. Mix in parmesan cheese and basil. Season with salt and pepper.
