Baked Oatmeal Chocolate Chunk Cups

High fiber, healthy & no mixer required

(peanut-free, tree-nut free, sesame free, gluten free, dairy free per notes below)


Makes 6 cups

canola oil spray

3/4 c milk or plant-based milk for dairy-free

1 egg

1/4 c maple syrup

1/4 c canned pumpkin

1 1/2 c old-fashioned oats (gluten free oats for gluten free)

1/2 tsp baking powder

1/4 tsp vanilla extract

pinch salt

1/4 c chocolate chunks (or enjoylifefoods dairy free mega chunks)

Preheat oven to 350 degrees. Spray muffin tin with canola oil spray.

Whisk all ingredients together except chocolate chunks. Fold in chocolate chunks. The batter will have a lot of liquid in it. Divide evenly amongst muffin tins making sure all are filled with oats and liquid. Fill to the top and bake about 25 minutes until tops of muffins are set and no longer wet. Cool in muffin tins for 5 minutes before removing to cooling rack.
